Article 12 February 2021 Recipe of the Week: Peanut and Banana Pancakes 16 February is Shrove Tuesday, a religious festival celebrated all over the world, and a common celebration is cooking pancakes! This is a way to use up “luxury” ingredients ahead of the 40 days of fasting known a Lent… and if we’re celebrating in style then this banana and peanut recipe will be a hit with the whole family! Serves 4 Total Time: 20 minutes INGREDIENTSMETHODPlain Flour 200gBaking Powder 2 tspCaster Sugar 1 TbspCooking Salt ½ tspSalted Butter 25gSemi Skimmed 300mlVanilla Essence 1tspMedium Banana 1Smooth Peanut Butter 85gOil 45ml1. Heat a non-stick or flat griddle pan over medium heat.2. Whisk flour, baking powder, sugar and salt together in a mixing bowl. Combine milk, banana, peanut butter, egg, oil and vanilla extract in a separate bowl; pour into the flour mixture and whisk together until thoroughly mixed.3. Use a tablespoon to measure and pour the pancake batter in portions onto hot pan. Cook until tiny air bubbles form on top, 2 to 5 minutes; flip and continue cooking until the bottoms are browned, 2 to 3 minutes.4. Repeat with remaining pancake batter.
