Recipe of the Week: Onion Bhaji Burger

This week is Coeliac awareness week. Coeliac disease is an autoimmune condition where the immune system (the body’s defence against infection) mistakenly attacks healthy tissue.

With coeliac disease, the immune system mistakes gluten as a threat to the body and attacks it. This week is all about raising awareness of the condition, and we have a delicious recipe that everyone can enjoy, including those following gluten-free diets!

Serves 4

INGREDIENTSMETHOD
​​​​​​​​​​​​​​3 Red Onions
2 tsp Cumin Seeds
2 tsp Ground Coriander
2 tsp Garam Masala
4 Tbsp Gram Flour
1 tsp Baking Powder
10g Grated Root Ginger
30ml Vegetable Oil
1 Bunch Mint
1 Bunch Fresh Coriander
150g Yoghurt
4 Tbsp Mango Chutney
4 Gluten-Free Rolls
1. Peel and thinly slice the onions, place in a bowl with the cumin seeds, ground coriander, garam masala and grated fresh ginger.

2. Chop the stalks of the coriander and add to the onions along with the baking powder and gram flour, combine well and then mix in 4-6 tablespoons of cold water to make a thick onion batter, chill for 10 minutes.

3. While the onion mixture is chilling, chop the mint and coriander, fold through the yoghurt, and refrigerate until needed.

4. Heat the oil in a pan, add a tablespoon of the onion mixture and flatten slightly, repeat 3 more times, fry on both sides for 3-4 minutes or until the bhaji is golden brown, repeat with the remaining mixture, cook 2 bhajis per portion.

5. Cut the buns in half and toast.

6. Place a spoon full of the yoghurt on the base of each bun, top with a bhaji then another spoon full of yoghurt topped with a further bhaji, finish with a spoon full of mango chutney and the bun top.
