Recipe of the week : Honey Lemon Chicken

​​​​​​​20 May is World Bee Day. In celebration, we’re championing British honey with this tasty dish!

Serves 4

​​​​​​​​​​​​2 Large Chicken Breasts
¼ tsp Garlic Powder
50g Plain Flour
1 Tbsp Vegetable Oil
2 Tbsp Melted Butter
115ml Chicken Stock
1 Tbsp Lemon Juice
Zest of half a Lemon
2 Tbsp Honey
Salt & Pepper
1. Cut your chicken breasts in half lengthwise so you have four thinner fillets. Sprinkle them with salt, pepper, and garlic powder. Dredge them in flour so they’re evenly coated.

2. Add the oil and one tablespoon of the butter to a frying pan over medium-high heat. Once the pan is hot, add the chicken and cook it for 4-5 minutes/side or until golden.

3. Take the chicken out of the pan and set it aside. Remove the pan from the heat and stir in the chicken broth, lemon juice & zest, honey, and the remaining butter. Scrape up the brown bits from the bottom of the pan and add the chicken back in.

4. Cook the chicken for another 6-8 minutes over a medium-high heat, until the sauce has reduced and thickened and the chicken is fully cooked through.

5. Spoon the sauce over the chicken. Season to taste with salt & pepper.
