Recipe of the week: Chicken Yuk Sung

Serves 5     Total Time: 20 minutes

1 tbsp Sesame Oil
375g Chicken Mince
500g Rice Noodles
1 Red Onion, peeled and thinly sliced
150g Carrots cut into julienne
Mushrooms thinly sliced
15g Fresh Ginger, peeled and grated
15g Garlic, peeled and grated
1 tbsp Chinese Five Spice
1 ½ tbsp Dark Soy Sauce
2 tbsp Oyster Sauce
4 Spring Onions, thinly sliced
2 Red Chilli, thinly sliced
1 Little Gem Lettuce, leaves picked to make “boats”
1. Heat the oil in a pan, add the mince and break up, brown all over
2. Add the red onion along with the ginger and garlic purees, five spice and chilli, fry for 3-4 minutes, add the mushrooms and carrots, cook for 2-3 minutes.
3. Add the soy and oyster sauce, simmer for 4-5 minutes.
Fold through the noodles.
4. When ready to serve place into lettuce leaves and sprinkle over the spring onions.
