Article 5 February 2021 Recipe of the week: Chicken Yuk Sung Serves 5 Total Time: 20 minutes INGREDIENTSMETHOD1 tbsp Sesame Oil375g Chicken Mince500g Rice Noodles1 Red Onion, peeled and thinly sliced150g Carrots cut into julienneMushrooms thinly sliced15g Fresh Ginger, peeled and grated15g Garlic, peeled and grated1 tbsp Chinese Five Spice1 ½ tbsp Dark Soy Sauce2 tbsp Oyster Sauce4 Spring Onions, thinly sliced2 Red Chilli, thinly sliced1 Little Gem Lettuce, leaves picked to make “boats”1. Heat the oil in a pan, add the mince and break up, brown all over2. Add the red onion along with the ginger and garlic purees, five spice and chilli, fry for 3-4 minutes, add the mushrooms and carrots, cook for 2-3 minutes.3. Add the soy and oyster sauce, simmer for 4-5 minutes.Fold through the noodles.4. When ready to serve place into lettuce leaves and sprinkle over the spring onions.
