Recipe of the week: Celeriac Soup

Celeriac Soup

Serves 6

A simple creamy, velvety soup.

Celeriac 550g
Onion 75g
Garlic Clove x 1
Celery 40g
Vegetable Stock 300ml
Milk 300ml
Bay leaf 1
Thyme 5g
Oil 15ml

1. Peel and medium dice the celeriac and onion, medium dice the celery.
2. In a pan heat the oil and sweat the onions, celeriac, garlic, celery, thyme and bay leaf for 10 minutes.
3. Pour in the vegetable stock and milk, bring to the boil and simmer for 20-30 minutes or until tender, remove the bay leaf
4. Blitz until smooth and season to taste.
