Recipe of the week: Buffalo Cauliflower

Serves 4

A vegetarian alternative to the time-old classic, buffalo wings. 

Smoked Paprika 1 Tbsp
Ground Cumin ½ Tbsp
Garlic Powder 1 tsp
Plain Flour 100g
Buttermilk 200ml
Cauliflower, broken into florets 500g
Hot Sauce 80ml
Maple Syrup 1 ½ Tbsp
Butter 15g

Ranch Dressing
Greek Yoghurt 100g
Mayonnaise 3 Tbsp
Chives chopped 20g
Milk 1 Tbsp
1. Heat the oven to 220C/200C fan/gas 7, line a tray with baking parchment.
2. Mix together the paprika, cumin, garlic powder, flour the salt in a large bowl. Make a well in the center and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
3. Warm the hot sauce, maple syrup, and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put it back in the oven for 8-10 mins.
4. Mix together all of the ingredients for the ranch dressing.
5. Serve the Buffalo Cauliflower with the Ranch Dressing.
